How to make traditional French Rararouille: the easy, classical way using such ingredients as eggplants, tomatoes and peppers and from garlic, thyme, bay leaf and olive oil in 30 minutes.

Ratatouille is a French Provençal stew that originated in Nice. I’ve had it many times in France prepared at home by the girls or at friend’s place. It’s not a typical dish that you will find n America. But what makes it so unique besides being healthy? Who know, but nothing says summer in France like a plate of Ratatouille on the table or simmering on the stove. Normally, Ratatouille is usually served as a side dish, but can be combined with pasta, rice. It’s a very flexible dish.

Ratatouille Recipe ,  Serving  4 people:

  • 1 Tomato
  • 2 Zucchini
  • 1 Eggplant
  • 1 Green Pepper
  • 1 Onion
  • 1 Bay Leaf
  • 2 Cloves of Garlic
  • Thyme, a few stems
  • Olive oil
  • Salt –  4 – 5 pinches
  • Ground Pepper  – 1 tablespoon

Wash all the vegetables carefully, cut the eggplant and zucchini into medium dice or curves, season them and let that sit about ten minutes or so. Then, wring them out carefully and set aside. Then, cut the tomatoes and chop the garlic, slice the onions and peppers.

Cooking: Heat up your pan and make sure it is hot and add oil, then sweat the onions and season. Make sure you get the onions to reduce and caramelize with that lovely brown color. Then, add the peppers and eggplant, season and cook over a medium heat for about 5 minutes. Last, add the zucchini since it is a wet vegetable, season and cook for 5 minutes, After that is done, you’re almost there. Add the thyme, bay lead and rosemary branch and tomatoes and remember to taste for seasoning.. Simmer and cover over a low heat for about 30 minutes and serve. Voilà !
